Smoked Haddock & Sweetcorn Chowder

This dish is the ultimate comfort food! Creamy, smoky chowder using delicious smoked haddock will warm you heart as well as your belly.
Serves 6

Ingredients
2 x large smoked haddock fillets
1 litre whole milk
1 x onion
3 x stalks celery
1 x leek
75g butter
1/2 pack smoked back bacon (approx 5 rashers)
2 x tbsp plain flour
1 x ham stock cube in 250ml water
1 x 340g tin sweetcorn (285g drained)
150ml double cream
400-500g potato
handful parsley
Method
1. Add haddock and milk into pot, heat until haddock is cooked through – strain out milk and retain for later and flake up haddock on plate with fork
2. Finely chop onion, celery, leek and add to deep pan with butter and bacon cut into small pieces – cook until softened
3. Add 2 x tbsp of flour to vegetable mixture to thicken, mix through then add stock pot dissolved in water
4. In a small blender, blend up 1/2 tin of sweetcorn and double cream – add this to pan with drained milk from haddock & remaining 1/2 x tin sweetcorn that wasn’t blended
5. Simmer vegetable, stock, corn and milk mixture on medium heat for duration it takes to cook potatoes from cold water – step below (approx 20-25mins)
6. Peel, chop and cook medium sized cubes of potato in salted water until you can pass a knife through them
7. Add cooked potatoes to pan with chopped parsley and simmer on low for further 30mins, stirring occasionally
8. Add in flaked haddock, season if necessary, then serve with fresh crusty bread ☺️🐟
Tips
When reheating – just add some milk to achieve desired consistency as it can be quite thick once chilled
Will keep for 3 days in fridge (not ideal for freezing due to significant volume of cream/milk in recipe)
