Ingredients
12 langoustine
30ml (2tbls) thai fish sauce
30ml (2tbls) light soy sauce
28g (1tbls) sugar
1 whole chilli finely chopped
1 clove garlic finely chopped
juice of 2 limes
56g (2tbls) chopped
fresh coriander
black pepper and sea salt flakes to season
sprig of coriander and a lime wedge to serve
Serves 4
Method
Poach the langoustine in boiling salted water for 4 minutes.
Meanwhile heat the fish sauce, soy sauce and the sugar together until dissolved then add the chopped chilli, garlic and lime juice.
Drain the langoustine and pour the warm sauce mixture over them while hot.
Season to taste with the black pepper and sea salt flakes.
Sprinkle with chopped coriander.
Refrigerate until cool.
Serve garnished with lime wedge and a sprig of coriander.
